Get Your Greens Together

Looking for tasty and creative ways to incorporate green veggies into your diet? You’ve come to the right place! Warmer weather is finally on its way, and my guess is that like me, you’re looking to switch up your diet from the winter. I’m sure I’m not the only one trying to ditch chili and calzones for cleaner-eating alternatives! But ditching fan-favorite winter foods doesn’t mean we need to sacrifice taste for the spring and summer! Check out these fun recipes that incorporate green into your diet and taste great.


Tex-Mex Lettuce Wraps #lettucewraps


Tex-mex style lettuce wraps are one of my favorites for spring and summer. First, season up some chicken with your favorites (chili pepper, oregano, and garlic powder are my seasons of choice). Next, chop up some different veggies for your salsa–tomatoes, some red onion,and jalapenos–and cover them in lime juice and cilantro. The flavors of your seasoned chicken, green and red chunky salsa, and a grain of your choice (I mix brown rice and barley) will taste amazing wrapped up in crisp romaine lettuce leaves.


Sweet Green Smoothie #smoothietime


A good smoothie is my go-to way of incorporating greens into my diet. They are quick to meal prep and easy to grab on-the-go. Start with half an avocado,a handful of kale, and another of arugula. Add pineapple, banana, coconut milk, and a drop of honey to give it a sweet kick. This yummy and energizing smoothie is packed with nutrients from greens and fruits, making it a great way to start your mornings.


Ricotta and Spinach Stuffed Peppers #stuffedpeppers


Green, yellow, and red stuffed peppers are one of the best ways to feel like you’re treating yourself without having to break your clean-eating diet. Mix seasoned ground beef (or turkey if you prefer light meet) with ricotta cheese, parmesan, and tons of spinach coated in olive oil and fresh garlic. Bake it on the stove or in the oven until warm and tender. This creamy and delicious meal will let you get in portions of both your recommended daily greens and your daily protein all in one.


Cucumber and Seafood Salad Sliders #cucumbersandwiches


This refreshing bite-sized snack is sure to leave you wanting more. Take a cucumber and slice it up into centimeter-thick pieces. Take some seafood salad (you can use store-bought or try Wholefood’s recipe at home) and put it on a cucumber slice. Chill in the fridge until ready to eat.These mini sliders make for a great treat on beach days. Just make sure to load up the cooler before you head out into the heat!
